Three Delicious Healthy Breakfast Recipes to Kick Start Your Day

Baked Oatmeal

Ingredients:

1 tsp stevia (powdered form)

1 ½ cups rolled oats

3 tbsp ground flax

3 tbsp chia

1 tsp baking powder

1 tsp ground cinnamon

¼ tsp salt

1 ½ cups unsweetened milk alternative

3 eggs (for an egg-free substitute mix 3 tbsp arrowroot powder or corn starch with ½ cup cold water)

1 ½ tbsp coconut oil, melted (or use MCT oil)

1 ½ tsp vanilla

1 c fresh or frozen strawberries (chopped if desired)

1 c fresh or frozen blueberries

Instructions:

Pre-heat oven to 375.

Spray an 11 x 7 inch baking dish

Mix oats, stevia, flax, chia, baking powder, cinnamon, salt in a bowl

Wisk milk, eggs, butter, vanilla in a separate bowl

Layer berries in the bottom of baking dish

Top with oat mixture

Pour milk mixture over oats

Place in pre-heated oven and bake until lightly browned, approximately 30 minutes

Delicious hot or cold

 

Sweet Potato Hash

Ingredients

1 lb ground pork or other ground meat

2 c sweet potato, diced

1 onion, chopped

1 tsp garlic, minced

1 red, orange, or yellow bell pepper, chopped

1 bunch kale, stemmed and chopped

½ tsp salt

¼ tsp black pepper

½ tsp oregano

½ tsp parsley

½ tsp thyme

½ tsp rosemary

1-2 tbsp cooking oil (olive, avocado, etc.)

Optional: avocado and/or egg

Instructions

Brown meat, set aside

Sauté sweet potato about 10 minutes; add onion, bell pepper, garlic, salt & pepper; sauté another 10 minutes; add kale and other spices; cook until kale is slightly wilted and still vibrantly green.  Mix in browned meat.

You may serve this as is or topped with avocado and/or fried egg

 

Breakfast Egg Scramble

Ingredients:

12 eggs, whisked

1 package fresh mushrooms, chopped

1 onion, diced

1 tsp garlic, minced

1 red, orange, or yellow bell pepper, chopped

1 small clam shell organic spinach

1-2 tbsp cooking oil (avocado, olive, etc…)

½ tsp sea salt

¼ tsp black pepper

Optional: 1-2 c shredded cheese or 3 oz goat cheese

Optional: avocado, fresh cilantro or parsley, fresh tomato, Beeler breakfast sausage links, bacon, salsa, Cholula

Instructions:

Sauté onion, bell pepper, and garlic in oil until slightly softened.  Add mushrooms, salt & pepper; sauté about 5 more minutes.  Add spinach and cook until slightly wilted.  Add eggs and cook until scrambled appearance.  If adding cheese top and let melt.  Serve as is or add any of the other optional ingredients listed above.

*This recipe can be easily adapted into an oven bake typically 400 degrees for 30 minutes or so.
